Mexico's national drink, tequila, is a vacation must.The liquor is distilled from the fermented juice of the blue agave plant. Tequila ages anywhere from seven months to seven years. Younger tequilas are colorless and labeled blanco. The expensive aged tequilas called ańejado, are golden. Mexicans drink tequila in two ways, either by licking salt from the hand, knocking back the shot, then sucking a lime, or by drinking it straight, with a chaser of sangrita, a chile and tomato preparation. Mezcal is also made from an agave, look for the worm in the bottle. Mexican beers are international favorites and wines are also coming into their own, gaining recognition in foreign markets.
